My Favorite Time of the Year ...

Welcome - to issue 9 of
Easy Food Dehydrating Depot!

Autumn, AKA Fall, is my favorite time of the year. To me, it means that Hurricane Season is just about over and we've survived another year without having to haul out the plywood and hassle with insurance claims.

Obviously, that's not been the case for folks up north, and we sincerely wish them well - flooding is NOT fun.

Fall means it's getting closer to Thanksgiving ... and being even more grateful for what we have. It is so easy to take things for granted ... and with the advent of Thanksgiving bringing cooler temperatures, it makes for superb veggie-growing weather in the hot summer-time zones of Florida.

We're pleased to announce that this week saw the start of our very own vegetable garden! This way, we'll be able to dehydrate our own fresh vegetables and have them on hand during the too-hot-to-garden summer months!

We have an old friend, John, over from the UK staying with us for a month, and he is going to help me plan and execute the garden ... one day was spent looking for the perfect spot, away from shade trees, and close enough to the pond for our water source. Since that day, we've had three straight days of torrential rain and a week of John's visit is now over ... and we've got nothing else done! The advantage to all this rain has shown us that the initial garden spot we chose would've got flooded out, so we'll be marking out a new spot on higher ground, not too far away.

Fingers crossed the rain doesn't start up again!

Lori asked this question last month: "Although I've been looking around I have not had any luck finding any reference to dehydrating cooked pasta. By that I mean in certain emergency situations wouldn't food prep be faster and use less water if pasta (noodles, spaghetti, etc.) were also cooked, then dehydrated and packaged for long term storage? "Instant" rice comes to mind as an example of a product already on store shelves (albeit they're in short term packaging). Any prohibitions to adding pasta products? Any special considerations in preparing/packaging/storing?"
