It's Still A Tad Chilly...

Hi there, Susan here. It's still a tad chilly even down here in Florida and my heart goes out to those of you who live in much colder climates. I have lived with snow before and I'm aware that many people love it! Think skiers, and polar bears!

But for those of you who are home-bound... nothing beats wrapping your cold hands around a steaming big mug of... soup!

I've been making a lot of soup lately. A lot. It's the ultimate "comfort food."


Pasta 'n' More Pasta Pot


My mom got me a pasta pot that's made of plastic, for Christmas. You stick it in the microwave. Guess what? It works! It's saved me the time from running back and forth to the gas cook-top and PC keyboard to see if the soup's boiled over!

This is a great way also to use your dehydrated veggies in the winter time. Put a good handful or two of dehydrated veggies such as carrots, diced potatoes, peas and the like into the blue oval-shaped pasta cooker along with 6 cups of (good) water with a couple of dessertspoons of vegetable stock (I use "Better Than Bouillon" by Superior Touch).

Stir well. Add a can of diced chopped tomatoes and a good sprinkling of Italian herbs.

Side note: My mom also gives me the left-over pasta packets from some of those "helper" meals (dad just likes the sauce!) so I end up with the twirly pasta for free!

Twenty Two Minutes Later...


Put the pasta in - and leave the lid OFF. Stick it in the microwave for about 20 minutes. Carefully take it out of the microwave, making sure your cardigan sleeve doesn't catch the latch on the microwave door. Easy does it!

Next, slice up some crusty French bread, slather on some butter. And... Enjoy!

Oh, you can also add a can of pre-cooked chicken; just crumble it up before it goes in the micro. Tasty! And quick. And only 1 pot to clean! I like that.
